Tasty Taco Chili is a fast and easy recipe that can be ready in about 1 1/2 hours. It is loaded with beans and ground beef making it high in fiber and protein. Serves 6-8 people generously. Just double or triple the recipe for more!
Ingredients
1 pound of ground beef
1 can of black beans
1 can of pinto beans
1 can of kidney beans
1 can of petite diced tomatoes
1 can of Rotel tomatoes with green chilis (use mild or hot depending on taste)
1/2 cup chopped onion (frozen is OK)
1 packet of taco seasoning (any brand)
1 packet of Ranch seasoning (powder)
1 1/2 cups of water
1 frozen bag of corn (yellow or white)
dash of chili powder
Directions
Brown the ground beef with onions and drain
To one large pot add ground beef and water
Add black beans, pinto beans, kidney beans..DO NOT DRAIN!
Then add tomatoes, Rotel, taco seasoning, ranch seasoning, corn and chili powder
Bring to a boil while stiring and then turn down to low
Cover and simmer for at least 1 hour (the longer the better)
Top with
Fritos or Tortilla chips
Sour cream
Shredded cheese
Serve with
Margarita
Sangria
Remember that in order to make the recipe milder for the kids, use the mild Rotel. If you want to have smoke billowing out of your ears, use the hot Rotel. Either way, you are gonna love it!
Refridgerate leftovers and heat and enjoy again the next day!
