This fast corn tortilla recipe is so delicious and easy to make that it is the perfect quick food for gluten free diets.

Finding quick food for gluten free diets can be hard due to the fact that everything has to be prepared by hand. When you want a fast weeknight meal the only option seems to be pre-packaged foods that are high in empty carbs, and sometimes low on nutrition.

This fast corn tortilla recipe is easy to make. It only takes about 30 minutes from start to finish. Best of all, you don’t have to be gluten free to enjoy it. There are no specialty ingredients, just real food.

Chicken and Rice Soft Tacos are made with shredded chicken. The type of chicken you use is up to your preference and time requirements. Some suggestions for getting shredded chicken without sacrificing extra time for fast weeknight meals are:

  • Rotisserie Chicken- Pick up a rotisserie chicken from your local grocery store. They have a great flavor and are easy to shred for recipes at home. Be sure to check the ingredients for possible gluten contaminants before purchasing.
  • Crock-pot Chicken- Chicken for Chicken and Rice Soft Tacos can be made ahead of time in a crock pot. Place 1 pound of chicken, 1 small chopped onion and 1 tsp ground cumin in the crock pot and cook for 6-7 hours on low, until chicken is no longer pink. This method of cooking chicken in a crock-pot makes a large batch. Use what you need now and reserve the rest for salads or other quick recipes.
  • Canned Chicken- On a busy night, canned chicken is a super fast ingredient. It requires no additional preparation time.

Ingredients for Chicken and Rice Soft Tacos

  • 2 c. shredded chicken
  • 1 c. uncooked rice
  • 1 c. Corn and Bean Salsa
  • 2 c. water
  • 1 Tbs. turmeric
  • 1 tsp. ground cumin
  • 1/2 c. shredded Cheddar cheese
  • 12 white corn tortillas

Preparation for Chicken and Rice Soft Tacos

  1. Put all ingredients except cheese and tortillas into a medium sauce pan or large skillet with a lid.
  2. Bring to a boil, stirring occasionally.
  3. Once boiling, reduce heat, cover and simmer on low for 20 to 25 minutes.
  4. Fluff rice mixture with a fork and top with cheese.
  5. Serve on warm white corn tortillas.

Serving Suggestions for Chicken and Rice Soft Tacos

Chicken and Rice Soft Tacos are delicious by themselves. Here are a few ideas to add a little extra pizzaz.

  • Top your Chicken and Rice Soft Tacos with lettuce, tomatoes, sour cream and guacamole for a flavor fiesta.
  • Use the same filling for Chicken and Rice Enchiladas. Roll rice mixture in tortillas and place in a baking dish lined with your favorite taco sauce. Top with taco sauce and cheese and bake for 20 minutes at 375 degrees.
